I just enjoyed a very nice visit with my lovely Daughter, whom, has moved too far away, and, has been quite busy in her new life! This is the 2ND visit since the beginning of the year, which, is not bad, so, I feel BLESSED!!!
I had wanted to take her out for Dinner, last night, to make her time here, more festive, but, she wouldn't hear of it! She wanted me to cook one of her favorite meals! She asked for homemade chicken pot pie, but, I did not have all the stuff I needed, and, was pressed for time, so, couldn't make a run to the store, so, we agreed on meatloaf, with my own version of potatoes Au gratin, and, a fresh romaine lettuce salad! It turned out perfect, and, everyone was happy!!!
Life is so different when your Children grow up, but, especially, when they move far away! Some people have lots of money, and, can visit with their Children, but, I am not one of those people, plus, I have an aging cat, who needs me here with her! After she has gone, I will take two weeks, and, drive down to visit, but, until then, it is rather difficult to get used to! I am happy for her, especially, since she LOVES her new life, so, that helps some. Still, it is just, sooooooooooo far away! This is still pretty new to me, so, I imagine, that with time, it will get easier??? I pray it is so!!!
I don't use recipe's but, here is my meatloaf, as best as I can relay it, void of measurements! Serves 2-4 people...
2-3 lbs. of ground chuck
10-20 saltine crackers, ground finely (I put them in the blender on the ice grinding mode)
2 whole eggs
1 small chopped onion (last night I used dried, minced onion, about 3-4 Tbs.)
Sometimes I add a BIT (like a 1/3 - 1/2) of chopped green, or, red pepper
About 2 Tbs. of garlic powder
Seasoned salt to taste
Black pepper to taste
Mix all ingredients well, knead a bit, form into whatever shape (I make mine like oblong), place into an oven safe dish, or, pan (I use a glass brownie pan) NOTE: Meatloaf pan works best, especially the new kind with the drain liner in the bottom!!!
Now, I make the sauce...
Taking a 2 cup measuring cup, I add ALMOST a 1/2 cup of sugar, or, brown sugar, then, I NEARLY fill the measuring cup with ketchup, then, a small squirt of prepared mustard, like French's, and, about an 1/8 tsp. of Worcestershire sauce, and, a BIT of seasoned salt. Mix very well, and, pour onto top of meatloaf. Place into center of oven on just a bit BEFORE 350 degrees, and, bake, roughly, an hour and, a half, or, until center is browned. Hard to be exact, as EACH oven, and, pan temperature varies! The sauce should be bubbling, almost like candied!!!
This meatloaf is very tender, tasty, and, LOVED by almost everyone who tastes it, and, is highly, requested! Some are used to meatloaf with gravy, so, the sweet-sour taste of the sauce is not welcomed by some! The ones who LOVE it, LOVE it SOOOOOOOOOOOO much!!!
Cooking is one of my favourite things, and, while I was never TAUGHT to cook, I was able to become quite adept at it, by memorizing tastes, and, being able to taste ingredients, plus, by some sort of memory of how my Grandma used to cook, which, amazes me, but, actually, IS locked in my memory banks!!!
Well, I am off to get ready to go to the nursing home for Dinner! It is dark, windy, and, cold today; a TRUE Autumn day, so, don't know if I will be able to take the person I visit out for their nightly walk, but, am going to try! Last time I was there, he is in a wheel chair, and, put his feet in a position to become a human plow, through the leaves, and, had a HUGE pile of them ahead of us! It was hilarious! I was laughing so hard, then, I got bit all over by the bugs, which, were resting in those leaves! This place is in the woods, and, is quite beautifully landscaped, with an enormous amount of trees, flowers, and, other beauties of Nature; the people who reside there, are fortunate, in comparison to the other ones I have visited!!!
